KARIN'S MARBLE CAKE

Passing on my Marble Cake recipe. It was always my hubby's favorite cake, but I don't bake anymore.

Preheat oven to 350 degrees

Bundt pan sprayed with Pam

In large mixing bowl, set on high, cream together until fluffy

250 gr. unsalted butter (or margarine) with 250 gr. sugar

Add 2 tablespoons of hot water

In separate bowl gently sift together

500 gr. of all-purpose flour

1 package of Dr. Oetker Baking Powder

Have ready one cup of milk at room temperature

Into the fluffy butter mixture, add five eggs, one at a time, beating well after each addition.

Add 1 teaspoon of Pure Almond Extract.

Turn mixer to low. Gently add half the flour mixture to the butter mixture until just blended. Add the cup of milk all at once and mix until just blended. Then add the remaining flour until blended. Do not overbeat! Turn the mixer off.

Into your prepared bundt pan put half the dough. Add 4 heaping tablespoons of Nestle's Quik (or 2 tablespoons real cacoa) to the remaining dough and stir until mixed. Place on top of the first layer of dough. With a fork fold the top layer under the first layer.

Bake 1 hour in a 350 degree oven. Test with a toothpick to see if done in the middle. Remove from oven and invert bundt pan onto cooling rack. Enjoy with a good cup of coffee!

The basic white cake dough (without the chocolate) can be used as a base for so many other cakes - blueberry, cherry, strawberry-rhubarb streusel cake made in pie plates; Bienenstich on a large cookie sheet; fresh plum, sliced apple cake in pie plates; or bake in two or three small loaf pan. Adjust baking time accordingly.

Can't wait to get back to my own kitchen and bake it again!
